You would be tempted to take a bite into this recipe
(mold size: 15 x 15 cm)
Ingredients:
4 eggs 60g sugar 50g vegetable oil 70g milk 60g cake flour / all purpose flour
whipped cream (optional)
Instruction:
Line the mold with baking paper (no need to butter it) and pre heat oven 150C
separate 4 eggs
mix vegetable oil and milk in a bowl then microwave for 30 – 40s
sift in the flour and mix well
add 4 egg yolk into the batter, add one by one
in another bowl, add all the sugar at once into 4 egg white and start whisking with a hand mixer to make meringue
whisk until soft but firm peaks (please check the video)
add 1/3 of the meringue into the egg yolk batter, gently mix with a whisk
when combined, pour the batter back to the meringue in 2 times, gently fold to incorporate
please fold gently and don’t over mix the batter
bake the cake in a water bath at 150C for 45 – 50 minutes
serve it hot with milk
How to work on American Measurement system:
Use a food scale!
food scales are cheap and sooo much easier than getting a million measuring spoons/cups anyway. You just pop the bowl onto the scale, tare it, and add directly from the container until it reaches what you want. Highly recommend.
