Veggie has recipe not only tempting way to start your day but healthy breakfast too.
You can have it as a wholesome meal after a hard day’s work.
Ingredient:
2 medium poblano peppers diced
1 small sweet onion diced
1-1 1/2 pounds of carne picada
Cheese of your choice, I just used a mexican blend
bag of small yellow potatoes quarted(I used enough to mostly cover the bottom of a 12 inch cast iron skillet)
4-6 eggs
tomatoes ( I used a medley of grape tomatoes and added as much as I wanted) if using grape tomatoes slice them in half
cilantro
green onions
salsa verde
Preparation method:
-preheat oven to 400°
heat pan with oil
Season carne picada as desired (I used ancho Chile powder,cumin,oregano, fresh minced garlic, salt, and pepper.)
Wait until carne picada turn brown and set it aside.
-Cook potatoes until it turns brown in color and set it aside.
-sautee onions and peppers until it turns slightly brown in color.
-Add back potatoes and mix.
-add carne picada, halved tomatoes, crack eggs evenly over the top taking care not to break the yokes, sprinkle heavily with cheese.
-place in oven for 15 minutes or until eggs are cooked.
-It is fine if the yokey and the cheese are melted.
-garnish with cilantro, green onions, and salsa verde.
Now, you can enjoy the temptation to your stomach full.
